Brunch for One: The Waffle Craving Edition

Wheat Bran-Flax Waffles with Cranberry Blueberry Sauce and Toasted Pecans


Waffles: Basic waffle recipe but I added 1/4 c of wheat bran, a 1/4 c of milled flax seed, and a touch of vanilla from Mexico

Sauce: Cranberries and blueberries with honey

And, devour!

The best part about making waffles for just myself, is that the leftovers can be frozen and popped into the toaster when I want to eat them again.

Stuffed Blueberry French Toast with Blueberry Sauce


French Toast: multigrain Thin Buns stuffed with 1/3 less fat cream cheese, 2% plain Chobani, and organic no sugar added blueberry jam

Blueberry Sauce: blueberries, honey, a splash of R.W. Knudsen organic sparkling pear juice

...And devour!

Ooops...

It's been almost a year since I posted on here. I just thought to come here today, and then realized that my background was still appropriate for the upcoming holiday.

Ooops!

I can't promise that I'll remember to post, or even have time for that matter. But hopefully I can post some pictures at the very least.
